Thanks for the link. I have watched the first half hour so far, and hope to find the time for more. My take is that you are winning, Tucker.
Based on what I have heard so far in this debate; and read and heard for the past 18 years in the media covering human diet and health (with thanks to mice for their part in the studies), there is not enough attention paid to the amount of processing and, in that processing, the use of deleterious chemicals, heating, etc., to produce for example corn oil from corn. If there were plenty of oil in corn, why would we want to butter corn-on-the-cob ?
YES, the fact that many vegetable/seed oils (soybeans) began as lubricants for heavy machinery is mentioned but there is not much effort to specify what steps in the process are most problematic. And the quantification of anything, in the process, is mostly missing. I have not seen any comparisons, for example, of the processing required to produce soybean oil from soybeans, to the processing required to produce first-press olive oil from olives. We could really get going on this, and compare processing of corn >>>corn-on-the-cob, to corn>>>corn oil, to corn>>>ethanol.
When the question of ultra-processing of foods comes up, what I have seen has mostly focused on carbohydrates, and junk foods, many of which have been produced as low-fat junk foods since the low-fat craze of the 1980s. UPF of fats and oils ??
In the meanwhile, the mystery religion based on the belief that "Your body needs carbs. Your BRAIN NEEDS carbs." ...lots of carbs !....continues to be firmly entrenched in institutions - assisted living facilities, etc., etc.- across the country.
